PRODUCTION AREA
In the south of Trento, in accessible clayey soil, using the simple Pergola system.
VINIFICATION
Red vinification with maceration on the grape skins lasting 20 days, fermentation at a controlled temperature in steel tanks with selected yeast. Aging in barriques for 18 months.
CHARACTERISTICS
The long aging gives a ruby red wine with garnet reflections, a characteristic fine herbaceous fragrance with undertones of small fruits and hints of wood and species. Dry, decisive and pleasantly velvety on the palate.
ACCOMPAINMENTS
This wine lends itself to various combinations, exquisite with rich soups such as bean soup, veal and pork as well as rabbit “alla trentina”. If the wine is stored correctly in a cool place and possibly left laying flat, it has a long shelf-life. Uncork just before serving.
